A Thanksgiving Treat: Sweet Potato Cookies

Oh Thanksgiving, the most delicious holiday of the year. The turkey! The gravy! The Sweet Potato Casserole! I think the sweet potato casserole is one of the most appealing dishes on the whole table. The deep amber color of sweet potatoes topped with marshmallows and pecans. So sweet, so decadent. Sounds like the perfect ingredients for a cookie. Be warned, these cookies will go fast once added to the dessert table. It’s grab and go for the little ones (they love the marshmallow topping). It also serves as “I just want something sweet” for guests still lingering in the kitchen.

Sweet Potato Cookies with Marshmallow Frosting

Makes about 20 cookies

¾ cup butter, softened

¾ cup brown sugar

¾ cup mashed sweet potato, cooled (1 medium potato)

1 tsp vanilla

1 egg

1 cup flour

1 tsp baking powder

½ tsp salt

¼ tsp nutmeg

¼ tsp cloves

¼ tsp pumpkin pie spice

½ cup chopped pecans

I cup marshmallow crème (Kraft Jet Puffed)

1. Heat oven to 350 degrees F and line two cookie sheets with parchment paper.

2. Cook sweet potato and mash. Set potato to the side to cool completely.

3. In a standing mixer fixed with paddle attachment, mix butter and brown sugar until light and fluffy. Add cooled sweet potato and mix for 30 seconds. Add vanilla and egg.

4. In a small mixing bowl, stir flour, baking powder, salt, nutmeg, cloves, and pumpkin pie spice. With mixer running on low, add flour mixture to the butter mixture. 5. Spaced about 2 inches apart, spoon one heaping tablespoon of dough onto baking sheet. Bake cookies for 10 minutes or until edges are lightly browned.

Cool completely on wire rack. Once cookies are cooled, top with marshmallow crème and chopped pecans. Cookies can be refrigerated in air tight container for 3 days.
