I hope you had a wonderful Christmas and you’re finalizing your plans for the New Year! Today I’m sharing a delicious treat that would be the perfect addition to a New Year’s brunch, Coconut Vodka Brioche French Toast! It is absolutely divine!

Here’s what you need:

4 pieces of Brioche Bread cut into 1in slices

2 eggs

2 ½ caps full of Coconut Vodka

1 tsp of stevia or sugar

Pinch of orange zest

Tbs coconut oil

Bananas and honey to garnish

*Makes four French toasts serves 2

What to do:

Wisk together eggs, vodka, stevia, and orange zest. Heat ½ to 1 tbs of coconut oil in a pan. Dip your thick slices of brioche in your egg batter. Make sure both sides are evenly coated in egg. Pop your egg washed brioche in the hot skillet. Cook for 2-4 minutes on each side or until each side is golden brown.

You can find brioche at your local bakery. Day old brioche is perfect because it really absorbs the egg mixture. Brioche has a very similar texture of a croissant very flaky and buttery…YUM!

Plate on your favorite china add a drizzle of honey and a few slices of banana. No syrup necessary! Serve with some coffee and a mimosa and this French toast is sure to deliver.

Hope you enjoy!

Join us Wednesday for the Lavish Lemon Link up! We will be sharing our goals, dreams, and resolutions for 2015! You can share the same or anything else you please.

XOXO
