Blueberry Lavender Pancakes
1 cup of vanilla almond milk
1 1/2 TBS of dried lavender
I cup of flour
2 TSP baking powder
1/2 TSP of salt (I used pink Himalayan salt)
2 TBS agave nectar
2 TBS applesauce (this replaces your oil or butter)
1/4 TSP vanilla extract
1 large egg
I cup of washed blueberries
Olive oil cooking spray
*Makes 6-8 medium sized pancakes
In a small sauce pan, combine milk and lavender. On medium heat, bring to a boil then reduce and let simmer on low for five minutes. Remove from heat; pour into a bowl to cool.
This first step can be done the night before and stored in the fridge, after cooling to room temperature. Typically lavender can be found at your local farmers market and can be used for more than just cooking!
In a separate bowl, combine all your dry ingredients. Whisk dry ingredients for smooth texture then set aside.
In a small bowl, muddle your blueberries until they are a smooth puree consistency (This step can also be done the night before and stored in the fridge). You could always use a blender instead of muddling (I just happen to find muddling more therapeutic).
TIP: Taste your blueberry puree. If it is tart, add sugar to taste (no more than a tablespoon). If your blueberries are sweet, don't bother with the sugar.
In a mixer (or using a good old fashioned whisk), combine all your wet ingredients including your muddled blueberries. Once your wet ingredients are combined, gradually add your dry mixture. Make sure there are no lumps in your batter.
Use a soup ladle to dish out your pancakes. Fill the ladle 3/4 full for a perfect medium size pancake. Coat your non-stick skillet with a little olive oil spray and bring to medium heat. Ladle your pancake mix in the center of the pan. As soon as your pancake starts to bubble on the edges, give it a quick flip. Repeat this until all your batter is gone!
TIP: Heat your oven to 200 and use to warm your pancakes (just use a cookie sheet to toss them on), so your guests can enjoy their pancakes together.
You can top your pancakes with maple syrup, butter, jam, powder sugar, honey, or more fruit.
The best part of making theses pancakes is the smell! The lavender will leave your house smelling amazing and might have your guests feeling sleepy and full after breakfast.
